As the most wonderful time of the year approaches, you’re going to need a few recipes that measure up. That’s where these incredible pomegranate snowballs come in. Sweet but not too sugary, and the shredded coconut just makes it more fun and seasonal. Plus the pomegranate is a huge source of antioxidants, so these treats are basically good for you. Well, sort of. Read on for the full pomegranate snowball recipe below!
Here’s what you’ll need:
1 cup of pomegranate jelly
1 cup of coconut flour
2 TBSP of milk of choice
1/2 tsp of vanilla bean paste or extract
1/4 tsp of salt
1/2 cup of shredded unsweetened coconut (for rolling)
Here’s what to do:
Using a food processor, blend all the ingredients (except the shredded coconut) thoroughly, and allow to stand for around 2-3 minutes. Pour the shredded coconut into a shallow bowl or dish.
Roll 1 TBSP of the pomegranate mixture into a ball, and then roll the ball in the shredded coconut to coat completely. Repeat with the remaining dough and shredded coconut.
Allow the finished balls to stand for at least 5 minutes before eating. Enjoy! Store any leftovers in refrigerator.
