How do you take a classic like peanut butter & jelly and make it better? You combine it with another classic - pancakes! And that’s just what we did with this PB&J pancake recipe. If you’re thinking it sounds too complicated to whip up before a busy day - or, let’s face it, even for dinner - that’s where you’re wrong, because this breakfast is way easier than you think. Here’s what you’ll need:
1 cup pancake mix
1/2 cup milk
1 egg
1/2 cup of your favorite peanut butter
1/2 cup of your favorite jelly
Here’s what to do:
Grease a pan or griddle and place over medium-high heat. While the pan is heating, mix the pancake mix, milk and eggs together. Pour a small amount (a few tablespoons) of batter onto griddle, and top with about a tablespoon of jelly. Pour another few tablespoons of batter on top of the jelly. When the pancake batter is bubbling, flip it over and cook other side. Continue until you’ve made as many pancakes as you like
(Sidenote: if you want bigger pancakes or more jelly inside, go for it! We believe in you.)
Put peanut butter in the microwave for about 15 to 20 seconds until it’s warm and runny. Top the jelly pancakes with the peanut butter and try not to inhale them too quickly.
