There’s not many more satisfying things in this world than a plate of fresh-tasting, delicious pasta. Except maybe if that pasta is also completely gluten-free. A few veggies, some Parmesan, pancetta and @Barilla Gluten Free Fettuccine is all you need to make a quick and easy pasta recipe that tastes like you could be ordering it off a five-star menu. Here’s what you’ll need:
1 box of Barilla GF Fettuccine
5 oz of gluten-free pancetta, diced
2-3 TBSP of extra virgin olive oil
1/2 cup of grape tomatoes, halved
1/2 cup of frozen peas
1/4 cup of fresh parsley, minced
Parmesan cheese, shaved
Kosher salt and freshly ground black pepper
Here’s what to do:
Cook the pasta according to the package directions and drain it thoroughly. In a large pan over medium high heat, brown the pancetta in the olive oil. Reduce the heat to medium and add the tomatoes and peas, and cook with the pasta until everything is warmed through. Add the parsley and a handful of the Parmesan to the cooked pasta mixture and remove from heat. Toss to coat the pasta with cheese, and season to taste with salt and pepper. Serve and enjoy!
