Here’s what you’ll need:
- 1 1/2 pounds (16-20 or 21-25 count) raw shrimp, deveined
- 2 green onions, cut in 1-inch pieces
- 2 oranges, one sliced, one halved
- 2 heaping tablespoons spicy seasoning salt (like Montana Mex)
- good quality olive oil
Here’s what to do:
Preheat the oven to 400 degrees F.
In a large bowl, toss the shrimp, green onions, orange slices and the juice of the halved orange with 2 teaspoons of the olive oil and the Montana Mex Seasoning Salt. Making sure the seasoning salt is distributed evenly.
Drizzle a little more oil on a rimmed sheet pan. Arrange the shrimp on the pan in one layer, ensuring that the orange slices are spread evenly throughout.
