Sometimes you CAN have your cake and eat it too. This mini cinnamon cake is perfect for when you’re craving just a little something sweet but don’t feel like sharing. You can make it in a coffee mug in under 10 minutes - and there’s no oven needed!
Here’s what you’ll need:
1 tbsp butter
3 tbsp flour
1/4 baking soda
2 tbsp brown sugar
1/2 tsp cinnamon (one packet of Cinn-Credible cinnamon works perfect!)
1/4 tsp salt
2 tsp milk
1 tsp vanilla extract
1 egg yolk
Here’s what to do:
Place the butter in a (microwave safe) mug, and microwave for 30-40 seconds to melt. Add in the rest of the ingredients and stir to thoroughly combine.
Microwave for 1 minute on high. Check the cake, and cook on high for 30 seconds at a time until done (the total cook time should only be 1 1/2 to 2 minutes, cake is done when the top is firm.) Dig in!
