Because tomatoes are not always in season, the best way to intensify their sweetness is to grill, broil or roast them for a few minutes. Onions and peppers also benefit from a little flame. Kickstart your salsa ingredients under the broiler for just 10 minutes and you’ll find that restaurants can’t touch your new mad salsa skills!
Spectacularly Simple Roasted Salsa
- 6 Roma tomatoes, halved
- 1 large yellow onion, sliced
- 1 jalapeno pepper, stemmed and halved
- 1 lime, juiced
- ½ cup chopped cilantro
- salt and pepper to taste
Place tomato halved, onion slices and jalapeno peppers on a foil-lined sheet pan. (Tomatoes and peppers should be skin-side up.) Broil under high heat for 10 minutes until skin blisters and chars. Allow to cool to room temperature.
Transfer broiled vegetables into the bowl of a food processor adding any juices that were released as well. Squeeze in some lime juice and toss in cilantro. Remember to season with salt and pepper as well.
Pulse until pureed as desired. Serves 6-8.
