Grain Free Parmesan, Bacon & Black Pepper Rolls
Recipe:
2 tbsp Olive Oil or liquefied Bacon Fat
1 cup Parmesan Cheese, shaved or grated
2 eggs
1/4 cup milk
2 teaspoons Cracked Black Pepper
3 strips Gluten Free Bacon, cooked and crumbled
more Cracked Black Pepper or Coarse Sea Salt for dusting, if desired
Preheat the oven to 375 degrees, and line a baking sheet with parchment paper or a Silpat.
In a medium sized bowl, mix all ingredients together thoroughly (this may require finishing with your hands, so now is a good time to remove your jewelry). Then scoop out 10-12 equal balls of dough (about 2 tablespoons worth), smooth the balls with your hands, and place them 1-inch apart on the baking sheet. If you’d like, brush the top of each roll with a little oil or bacon fat, and sprinkle with salt or pepper. Bake at 375 for 2-25 minutes. Cool and enjoy!
