Strawberry shortcake is delicious. Everyone knows that. The ONE problem with it? It can be kind of a drag to make. That’s why we made it into COOKIES! And they’re gluten-free, no less, thanks to Pamela’s Pancake and Baking Mix. Seriously. 20 minutes is all you need for these strawberry shortcake cookies.

Here’s what you’ll need:
One packet (100g) of Pamela’s Baking & Pancake Mix
1/4 cup of butter, softened
1/4 cup of milk
1/4 cup of powdered sugar
1/2 cup of chopped strawberries
1 tsp of vanilla

Here’s what to do:
Mix all the ingredients together. Drop heaping spoonfuls of batter onto a parchment-lined cookie sheet, and sprinkle with a pinch of sugar. Bake at 375 degrees for 12-15 minutes. Yum!
