Lasagna is at the top of everyone’s list of favorite comfort foods - and being gluten-free doesn’t mean you have to ever miss out on it. We made lasagna rolls with DeLallo Gluten-Free Lasagna, and if we didn’t know the pasta was gluten-free we’d swear it was simply someone’s grandmother’s lasagna recipe. It’s that good. Here’s what you’ll need:
1 package DeLallo GF Lasagna, cooked to package directions
2 TBSP olive oil
1 lb GF spicy Italian sausage
2 cups fresh spinach
1 cup ricotta cheese
1 egg
1/2 cup shredded mozzarella
Salt & pepper
3 cups marinara
Here’s what to do:
Place the oil and sausage (remove casings if necessary) in a large skillet over medium heat and brown, breaking up the meat as is cooks. Once the sausage is about halfway cooked, add the fresh spinach and cook for 4-5 minutes. Remove from heat, and stir in ricotta. Then stir in the egg and half of the mozzarella, and season with salt & pepper.
Preheat oven to 375.
Spread 1 cup of the sauce in the bottom of a prepared baking dish. Place about 1/3 cup of filling at the end of a lasagna sheet, roll it closed, and place in the baking dish. Repeat with remaining pasta and filling. Top the rolls with the rest of the marinara and mozzarella, and bake for 20-25 minutes. Enjoy!
