During the summer we at Love With Food take every chance we get to put fresh fruit into our recipes, and this fruit salsa is the epitome of flavor. Berries, melon, apples - all the big summer produce stars are here. This stuff goes good on just about anything: chips, crackers, we even encourage you to try it on top of chicken or fish. Check out the full fruit salsa recipe below and make some tonight! You’ll wonder how you ever lived without it.
Here’s what you’ll need:
- 2 Granny Smith apples
- 1 lemon
- 1 cup of finely diced melon (your favorite variety) or kiwi
- 1 lb of strawberries
- ½ lb of raspberries
- 4 tablespoons of preserves (we used raspberry)
Here’s what to do:
Zest the lemon and set it aside. Peel and finely chop the apple, squeeze 2 teaspoons of lemon juice over the chopped apples and mix well to combine.
Finely chop the strawberries and melon (or kiwi). Gently combine all the ingredients. Don’t worry if the raspberries break apart a bit, because that’s what you want. Allow the salsa to sit at room temperature at least 15 minutes before serving. Eat with chips, meat or cheese and enjoy!
