You don’t have to visit the Big Easy to celebrate Mardi Gras. Enjoy New Orleans’ legendary Cajun and Creole flavors with this classic Cajun Delight recipe.

Cajun Delight
1 large onion or two medium onions
2 tablespoons of olive oil
1lb. of potatoes
4 medium ear sweet corn
1 lb. large shrimp
Tony Chachere Original Creole Seasoning
Thoroughly wash potatoes, corn, and onion. De-shell and de-vein the shrimps.
Chop potatoes into chunky cubes, and chop the corn up into 1-inch thick slices. Cut the onion(s) up into thin slices.
Combine potatoes, corn, and onions in a bowl, drizzle a tablespoon of olive oil over the vegetables, and season with salt and pepper. Mix it all up, and lay it evenly on a baking sheet.
Pop into oven at 375°F and bake for 25 minutes.
Pour a tablespoon of olive oil over the shrimp, and add a healthy sprinkling of Tony Chachere Original Creole Seasoning. Once the vegetables are ready, add shrimps to the baked vegetables, and put it back into the oven for 10 minutes at 375°F.
Viola! It’s ready! Serve as it is. Serves 2 to 4.
