Strawberries and Cream Hot Quinoa Cereal
-1 cup white quinoa
-2 cups coconut milk
-Pinch of salt
-strawberries, halved
-coconut shavings
-pistachios, if desired
Boil quinoa and milk with salt until all liquid has evaporated (similar to cooking rice). Top with strawberries and coconut and scarf down 🙂
Caprese Quinoa Salad
-1/2 cup red quinoa
-1/2 cup white quinoa
-2 cups water
-Pinch of salt
-2 tablespoons basil pesto (or to taste if you love pesto!)
-grape tomatoes, halved
-mozzarella balls
Cook quinoa as per first recipe. Mix in pesto, mozzarella, and tomatoes. Can be served hot or cold!
Simply The Best-Ever Red Quinoa Side Dish
-1 cup red quinoa
-2 cups water
-Pinch of salt
-1 shallot, chopped
Cook quinoa as instructed above, adding in shopped shallots. Serve on the side of just about anything - steak, chicken, fish, even veggies!
