Sure I’m a huge fan of a big goopy platter refried bean and cheese laden tortilla chips, but c’mon-every year? Can’t we do better than that? I think so. To test the theory, I grabbed a bag of potato chips and went to town just with the items that were in my fridge. Will you have these exact same leftovers to make your fuss-free Superbowl snacking? Not likely. But no one’s watching. Substitute freely and have fun with it. Top your chips with your favorite leftover combos they’ll be a slam dunk-uh, wrong sport- well, you know what I mean!
Potato Chip Nacho Subs: Ok, starting off easy here. Here’s what you do. Just spread a bunch of chips on a baking sheet like you would to make nachos (only potato, not tortilla chips). Chop up some sliced salami, provolone cheese and pickles and sprinkle on top. Season with a shake of oregano and bake until melted in a 400F oven. Truth be told, had I not used up my last pepperoncini last week, that would have been in place of the pickles. See what I mean by running with it?
Teriyaki Beef Chips: This was not originally teriyaki beef, but I solved that prob by slicing some of my grill steak into bite sized pieces and reheating with some teriyaki sauce and sesame seeds. Now here’s the crazy part. I placed that on top of a roasted sweet potato and -touchdown- we’re talking sweet, salty bliss in every bite. If I were to make these again, I would start by making a sweet potato puree and securing the beef on like that. And trust me, that day will come…soon.
Ranch Fried Chicken Chips: I know, what are the chances that I have fried chicken in my fridge the same week as steak? Really low. But, apparently it happens. And realistically, if you have chicken nuggets, tenders or any other breaded chicken in the freezer it’ll work just fine. Just heat up the chicken. Toss a little cabbage or cole slaw together with some Ranch dressing and slap it down on your potato chips. Top with the chicken and give each a hit of pickle (again, with the pickle, I know, but this is where I would put it no matter what!). Nachos will weep when they hear about this one.
Kardashian Style Salmon Chips: Now you’re all, who is this crazy with the smoked salmon just hanging around the house. Really though, we eat lots of bagels, so smoked salmon does happen. Are these a little Dash-spirational? If you’re planning on feeding a party of 20, probably. But if it’s just you and a couple of the besties, why not? This one’s got 4 ingredients plain and simple: potato chip, sour cream, smoked salmon and dill. Nothing else required. Though you might want to swap the keg for a bottle of bubbly to go with.
Steak and Potatoes Chip: Just in case I was going to girlie on you, here’s one that every guy will drool over. Add some horseradish to that sour cream that we were just talking about and mix in a little black pepper while you’re at it. Now, drop some down on each of your potato chips and top them off with sliced steak, roast beef (yes, the deli kind will totally work) and some green onions. BINGO! Steak and potatoes, just like that.
Evil, Delicious Dessert Chips: I’ll be honest, this is a road I don’t go down very often. But I wanted to give it a try. INSANE! Peanut butter, Nocciolata or Nutella and marshmallows. Do you understand what’s happening here?? Has everyone been doing this for years and not telling me? And if so, why not?
