It’s the middle of summer and almost 4th of July, which means that you’re all probably in the mood for some grilling. It’s no wonder, since the smoky flavor (and the grilling itself) is such a summer classic. But here’s the thing - how many of us are actually grilling experts? Do you tend to just throw something on the grill and then wait until it looks done? There’s actually much more of an art to it. Here are 10 of the best grilling tips to make every night of your summer parties unforgettable - even if it’s just a casual dinner in the backyard.

1. Douse Veggies In Ice Water
It’ll keep them crisp when you grill ’em, instead of getting all soggy.
2. Buy The Best Meat
We’re not telling you to buy $50 worth of steak every night. But if you’re going to put the effort into grilling up a meal, the best start is with the best product.
3. Let Meat Thaw Before Grilling
Freezer-to-grill meat is never delicious. Ever.
4. Pick Your Charcoal Carefully
Don’t get the stuff on the biggest sale. The charcoal is the thing that puts all the smoky flavor in your food, so you want it to be premium. Try one of these options instead.
5. Leave Steaks Alone After One Flip
You might be tempted to keep turning meat over and over to cook it faster, but you don’t have to. Only one turn of a good streak will still do the job, and keep the risk of overcooking down.
6. Use Onion Juice To Make Things Tender
Sounds weird? It works. Try it on meat and veggies.
7. Constant Vigilance
Even though you might be grilling in the middle of a big backyard party, don’t be tempted away from the grill. Meat can go from perfectly cooked to dry in seconds. It might be a little bit more maintenance, but boy will it be worth it.
8. Don’t Be Impatient
So the meat is cooked, everyone’s hungry - it’s time to eat, right? Wrong. Letting the meat sit for 10-20 minutes (covered in foil, of course) will seal the juices inside and make it taste even better.
9. Want Perfect Hot Dogs? Poach + Then Grill
Hot dogs are just as much of a classic summer food as steak - but how do you get that perfect grilled hot dog taste? Try poaching them in boiling water first, then put ’em on the grill for a few more.
10. Give It A Little Sugar
You know that delish caramelized stuff on desserts that are baked or sauteed? That’s what happens when heat meets sugar. Try sprinkling a little on your next steak. Not enough to make it taste too sweet, but just enough to caramelize on the surface of the grill. You’ll thank me later,
