1 cup mashed potatoes
1/2 cup cooked chicken breast, chopped
1/2 black olives
1 cup panko breadcrumbs
1 egg
a dash of pepper
a pinch of salt
1) Add mashed potatoes, chicken breast and black olives into a bowl and mix well.
2) Add salt and pepper to taste
3) Scoop up 1/2 of the mixture and shape it into a ball and flatten with palm.
4) In a shallow dish, add egg and beat it.
5) In another shallow bowl, add breadcrumbs.
6) Heat pan. When hot, add 1 tablespoon of oil to pan.
7) Place both shallow dishes next to pan. Take one potato cake, dunk it into the egg mixture, and then into the breadcrumbs dish. Make sure it's well coated on all sides. Then put it in pan to cook. Repeat steps for remaining un-coated potato cakes.
8) Cook each side for about 2 mins or till golden brown. Serve hot.
