Cilantro Flatbreads

Ingredients
1 1/2 cups all purpose flour
2 teaspoon ground coriander
1 1/2 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup fresh cilantro, chopped
3/4 - 1 cup plain whole-milk yogurt
olive oil for frying
Directions
1) Sift first 5 ingredients
2) Stir in cilantro and yogurt. Stir with fork will small clumps form.
3) Knead mixture in bowl dough holds together. You may need to add a few more tablespoons of flour or yogurt to get a slightly sticky dough. Add one tablespoon at a time.
4) Put dough on a flour surface. Knead till smooth, about 1 min.
5) Divide dough into 8 pieces. Roll each piece into a ball and use a rolling pin to flatten the ball to 4.5inch round.
6) Heat a non-stick skillet. When hot, add olive oil. Add 3 round doughs to skillet to cook. Each side takes about 3 mins, flip and cook the other side for 3 mins.
7) Transfer bread to platter and serve warm.
