2 chicken breasts
1 cup buttermilk
2 cups Ritz cracker crumbs
Salt and pepper
1) Pound chicken breasts till thin and then slice them into smaller pieces. Each breasts should be sliced into 6-8 pieces. Season with salt and pepper.
2) Put sliced chicken and buttermilk in a ziploc or freezer bag. Marinate in the fridge for 1 day.
3) When ready to cook the chicken, preheat oven to 350 C. Line a baking sheet with parchment paper or aluminium foil. If using foil, make sure to spray it with non-stick oil.
4) Put Ritz cracker into a bag, seal it and bash it with a rolling pin, till the crackers look like bread crumbs.
5) Put Ritz cracker crumbs into a shallow bowl. Pour away excess buttermilk in the chicken.
6) Shake off excess buttermilk on the chicken and dip them into the crumbs. Make sure each slice is well coated.
7) Arrange the breaded chicken slices neatly on a baking sheet. Put in the oven and bake for about 10-12 mins.
8) Serve it with ketchup or other favorite condiments.
My kids love to help me with recipe, especially crushing the Ritz crackers and getting their hands dirty while coating the chicken!
These chicken nuggets can be used in mini chicken sandwiches/sliders too!

What a cool twist on the traditional kiddie food...the nuggets. My boys would definitely eat them every meal if I let 'em.
