Rujak, Indonesian Fruit Salad
1 pineapple, sliced
1 guava, if available
2 cucumbers
1 green apples
1 raw papaya, if available
1 sweet potato
For the dressing:
1 tbsp peanuts
1 tbsp palm sugar
1 tsp tamarind paste, dissolved in 1/2 cup of water
A pinch of salt
A pinch of dried shrimp paste, if available
2 chillies, or to taste
1. Slice all the fruits into bite size pieces. Thinly slice the sweet potato.
2. Fry the peanuts with some oil until golden brown.
3. With mortar and pestle, crush the peanuts with the palm sugar, chillies, salt, and dried shrimp paste. Add the water with tamarind gradually. Keep working until the mixture resemble thick sauce.
4. Pour the dressing over the fruit slices and serve.
