Wheat flour 1 kg
Fine-ground sugar 400 g
Poppy seeds 50 g
Cardamom 7-8 pcs
Grinded Arabic Gum 1 tbsp
Almonds and Pistachios 2 tbsp, roughly grounded
Clarified Butter 500 g
For the garnish:
Almonds 10-12 pcs, very finely chopped
Pistachios 10-12 pcs, very finely chopped
Heat the clarified butter and when it is hot, slowly add in the flour, stirring continuously. Keep stirring till the mixture takes on a medium brown color. Add the cardamom, poppy seeds, almonds and pistachios. When the mixture becomes dark brown, add the sugar and the arabic gum and take the mixture off the stove. Mix thoroughly.
When it cools, shape the mixture into balls the size of a golf ball or slightly larger. Garnish with the almonds and the pistachios and serve.
