2Tbs penut oil
1cup chopped broccoli
1/2cup sliced zuccini
1/2cup chopped pinnapple
1cup diced onion
1/2cup diced carrot
1/2cup fresh cut corn
1Tbs garlic
salt and pepper to taste
1/4cup Apricot Preserves
Once you have all of the vegetables cut you can get your peanut oil smoking hot in a wok or a large sauté pan. Once very hot add all garlic and all your vegetables one by one and season well with salt and pepper. The vegetables will begin to brown on one side and you can sprinkle some water into the pan to steam your veg. once the vegetables are almost cooked add you apricot preserves to coat the hot vegetables. This is a quick and easy dish to do at home and the vegetables are all inter changeable, just use whatever you have in the fridge!
