Thai Fried Rice W/ Chicken

12 oz chicken fillets
1 onion
1 tomato
2 scallions
10 oz rice
2 tablespoons oil
2 tablespoons soy sauce
1 teaspoons sugar

1. In a pot bring water to boil and add rice. Cook
for ten minutes and pour off water. Let rice
cool.
2. Slice chicken, dice onions and tomatoes, cut
scallions into 2 inch long pieces.
3. Heat oil in a wok or a pan and add chicken.
Stir-fry chicken until it’s tender.
4. Add onions and continue to stir-fry. Add
tomatoes and scallions and stir-fry for one
minute.
5. Stir in rice and heat.
6. Season with soy sauce and sugar
