Glaze
1 (16-oz.) can whole-berry cranberry sauce
2/3 cup fresh orange juice
1/8 teaspoon ground allspice
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 tablespoon corn starch
1 teaspoon red wine (optional)
Pork Tenderloin
8 to 10 pc of bacon
Combine glaze ingredients in a bowl and whisk. Then in a saucepan over medium heat. Reduce heat, and simmer, stirring occasionally, 20 minutes. Remove half of mixture, and set aside.
Wrap pork with bacon and secure with toothpicks.Sprinkle a pinch of allspice over the bacon. Bake uncovered in a 375 to 425 oven for 45 to 60 minutes, Glazing after 15min and then again in another 15 min. Remove and wrap in foil. Let stand for 10 min.Plate up and add remaining glaze over top and serve.
I make this during the holidays!
you can get anywhere from 8 to 10 servings. Depending on how big the pork tenderloin is
