10 Chicken Tenders
1/2 Cup Whole Wheat Flour
8 medium mushrooms
1 cup of Fresh Spinach
1/2 cup of low Sodium Chicken Stock
1/2 cup of White Cooking Wine
1/2 teaspoon of garlic powder
1/2 teaspoon of salt
1/2 teaspoon of pepper
3 table spoons of Olive Oil
2 table spoons of spinkle cheese
• Directions
Mix flour, salt, pepper and garlic powder in a large zip bag.
Heat 3 table spoons of olive oil in large skillet.
Place chicken in flour mixture. Make sure it's well drenched. Shake off excess flour and add to heated skillet.
Cook till lightly brown, on each side 4 mins per side. Set aside
In same skillet, add mushrooms and saute' about 3 mins, add chicken stock, white wine.
Simmer for about 3 mins. Return chicken to skillet. Cook chicken in chicken/stock for 20-25 minutes add spinach just as the chicken is finished cooking.
Season with pepper and salt. Spinkle cheese
Serve immediately.
