Spicy Creamed Chicken & Rice

1-2 chicken breast (diced small)
1 can of cream of celery soup (undiluted)
1/2 can of Rotel Tomatoes & Green Chili original (undrained)
4 scallions (diced) - green onions
4 Tbsp olive oil (divided)
2 boxes of prepared chicken flavored rice
cooking spray

Dice chicken breast in tiny pieces if you haven't already.
Dice Scallions if you haven't already.

Prepare rice according to directions and keep warm.

Get out a skillet (for frying chicken pieces)
Get out a medium sized saucepan for sauce
Spray both skillet and saucepan with cooking spray.

Turn heat to medium under the skillet.
Turn heat to low under the saucepan.

Add chicken to skillet and stir-fry until lightly browned and done.

Saute scallions until translucent and the room spells nice!

Drain chicken on some paper towels.

Dump Cream of Celery soup and Rotel in with the onions.

Add chicken to soup mixture.
Stir well and put a lid on it.
Simmer (stirring often) about 10 minutes.

When everything is done serve creamy sauce over rice, top with sour cream if desired and extra chopped onions.
