4 stalks of celery chopped and diced
1 white onion diced
2 granny smith apples ( green ) diced
1 baguette toasted and diced in cubes ( season with herbs )
2 cups of Chicken broth
1/3 cup of butter
California golden raisins
2 cups chestnuts ( stream)
1/2 cup California sliced almonds
1 1/2 cups stream & peel chestnuts
1/2 cup Cranberries ( optional )
drippings from turkey
On Medium heat in a saucepan melt butter . Add chopped celery, onions. Stir until onions are translucent. ( 2-3 minutes )
Add Green diced apples ( discard the lemon juice before chopping )
Add chicken broth and mix lightly adding the cubes season bread.
Add the chestnuts.
Cook for about 5 minutes until all is incorporated.
Add stuffing to the turkey or just cook on the stove and add some drippings from the turkey. ( cook for another 3-5 minuies)
Before serving add the sliced almonds for a crunch.
I used fresh chestnuts and it was a hassle peeling.
Next time I will use Trader Joe's frozen whole chestnuts.
