Mashed Bourbon Maple Sweet Potatoes

6 pounds sweet potatoes
1 lemon, zested and juiced
3 tablespoons pure maple syrup
3 tablespoons bourbon
6 tablespoons butter, at room temperature
1 1/2 teaspoons salt
1 teaspoon white pepper
1 cup pecans, chopped
Recommended Products
1) Preheat oven to 375 F or 180C
2) Roast sweet potatoes on a baking sheet for 50 mins - 1 hour, until soft.
3) Remove from oven and let it cool for at least 20 mins.
4) When cooled, peel sweet potatoes by hand and put the potatoes in a mixing bowl.
5) Add lemon zest and juice, maple syrup to the mixing bowl. Use an electric mixer to mix well.
6) In a small saucepan, over high heat, add bourbon. Let it come to a boil and till the saucepan slightly towards you to set it a flame. This method will not "burn off" the alcohol.
7) Add bourbon and butter to sweet potatoes. Add some salt and pepper to taste.
8) Transfer potatoes to a casserole dish. Sprinkle pecans on top. Bake for 20 mins till the top is golden brown.

Thanks for sharing this...my son asked me if there's a special occasion since it's not our usual plain mashed potato. The family loved it!
