    Cranberries in white wine




  • Ingredients


    2 bags of Fresh cranberries

    1 & 1/2 cups of White wine

    1 & 1/2 cups of sugar

    1 cups walnuts

    2 cans of mandarin oranges drained save the juice from the can

    1/2 Cup of can juice from the mandarin oranges

    for Garnish
    zest of an orange & fresh mint





    Directions


    Wash and rinse fresh cranberries thoroughly.

    In a medium pot, combine wine, can juice and sugar on medium heat until sugar dissolves.

    Add cranberries and simmer for 7-10 minutes or until sauce begins to thicken.Try to keep the cranberries whole.

    Do not smash the cranberries

    When all is cool add the Mandarin oranges and walnuts.

    Keep in the refrigerator in air tight container for 2 weeks before serving,

    Wine will burn off during cooking and all the flavors will marinate during the 2 weeks.





    Chef's Note & Story

    On Thanksgiving Day, Garnish the marinated cranberries with zest of an orange and fresh mint leaves.
