Tomato Gravy

Onions, dry, finely chopped 3 c
Meat Drippings and Shortening 3 c
Flour 1 q
Hot Tomato Juice 3 q
Beef Stock or Water 1 ΒΌ gallon

Saute onions in meat drippings until light yellow

Add flour, stir until well blended

Add juice and stock

Add cold roux, stirring constantly

Bring to boil, reduce heat and simmer 5 minutes or until thickened
