olive oil
1 whole skinless chicken
3 cans of chicken broth ( natural & low sodium)
one small onion diced
3 cloves of diced garlic
1/4 cup of wheat
1/2 cup of white beans
1/2 cup of chickpeas
3 diced carrots
1 bay leaf
2 chopped tomatoes
1/3 cup chopped parsley
1/3 cup chopped cilantro
red chili flakes ( to taste )
2 fresh twigs of thyme or dried thyme
salt & pepper to taste
In a pot heat the olive oil at a medium heat. Add the bay leaf,diced carrots, chopped onion & garlic.
Do not burn. When the onion is translucent add the chicken broth.
Combine white beans, chickpeas, cut up chicken, chopped tomatoes & cook for 30 minutes than add
wheat & thyme.
Cook for another 10 minutes add chili flakes, salt & pepper.
Garnish with chopped Parsley and Cilantro.
Nice warm soup for winter.
