Thai Spicy Shrimp Soup

6 oz mushrooms
16 peeled shrimp
2 scallions
4 cups chicken stock
3 tablespoon lemon juice
1 teaspoon chili paste
3 tablespoon lite soy sauce
3 Kaffir lime leaves (get at Asian / International
grocer, or substitute lime zest)
1. Bring chicken soup stock to boil in a pot.
2. Halve the mushrooms, and cut the scallions into
2" long pieces.
3. Stir in the lemon juice, chili paste and soy
sauce to the chicken.
4. Add mushrooms, scallions and shrimp and let
simmer for ten minutes.
5. Take off of heat, season with lime juice, and
serve.
