For each cup of rice add 1 1/4 cup of water.
1 cup of rice is about 3 small servings of rice. If more than 4 person double the recipe.
1 teaspoon extra virgin olive oil or 1 teaspoon butter ( optional )
1/2 cup chopped fresh cilantro
2 cup white balsamic rice
21/4 cup water
1/2 teaspoon salt
2 lime juice of 2 limes
zest of 2 limes
1/3 cup frozen peas at room temperatureIn a heavy saucepan,.Add rice and lime juice, stir for 1 minute.
Add water and salt and bring to a full rolling boil.
At boiling, cover, reduce the heat to a simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
When the rice is cooked add in the cilantro and fluff rice with a fork.
Add the zest of the limes. Drizzle the olive oil.
Fluff the rice and serve warm Frozen peas can also be added when rice is warm and done.
( Do not cook the peas with the rice ).
Keep the peas at room temperature and add the peas after the rice is done.
Add a dash of salt if needed.
Great side dish with wild salmon..
