6 slices of Salami
4 eggs
1/8 cup red bell pepper, diced
1/8 cup onion, diced
1/4 cup shrimp, diced
1/4 cup lump crab meat
salt & pepper to taste
1/2 cup shredded cheddar cheese
chives
Spray a non stick muffin pan with non stick spray. Place Salami in pan to form cups. In a bowl, beat eggs then add bell pepper, onion, shrimp, crab and salt and pepper to taste. Bake at 350 degrees for 20 minutes. Remove from the oven, top with shredded cheese and chives.
These are so good, I normally have to make a double batch for my crew. Enjoy!
