5 hard-boiled eggs, shelled
1/4 cup of mayo
1 scallion, chopped
2 slices of ham (omit if vegetarian)
1 tablespoon curry powder
1 tsp paprika
salt and pepper
1) Mash hard-boiled eggs with fork or potato masher in a large bowl.
2) Add remaining ingredients to mashed eggs. Serve with toasted bread to make a delicious sandwich!
Store in container and refrigerate. Keep up to a week.
I love to prepare dishes that only require ONE POT! Less cleaning!
