For Cherry Tomato Salad
=======================
2 tablespoons extra-virgin olive oil
4 cloves garlic, chopped
2 pints cherry tomatoes, rinsed and stems removed
6 scallions, chopped
2 tablespoons red wine vinegar
Salt and pepper
1/2 cup coarsely chopped flat-leaf parsley
For Couscous
============
1 box of couscous (plain)
1 tablespoon curry powder
Cooking Couscous
================
1) Cook according to instructions on box. It's usually add box of couscous to 1.5 cups of boiling water. Cover and remove from heat. Let it sit for at least 5 mins. After 5 mins, fluff couscous gently with a fork.
Cooking Tomatoes
================
2) Heat a medium skillet over medium heat. When pan is hot, add olive oil and garlic and cook for about 1 min.
3) Add tomatoes and scallion. Cook till tomato skin begin to burst.
4) Add vinegar and remove from heat. Add salt, pepper and parsley. Toss well.
Mix Everything
==============
5) Mix couscous from step (1) with tomatoes from step (4) in a large bowl. Add curry powder and toss well. Add more curry powder if you like more heat. Serve warm.
I garnish mine with mint sprigs and having the salad chilled also tastes very good.
