4 skinless chicken breast, cubed
salt and pepper
1 tsp dried herbs or 2 sprigs of fresh rosemary
1 tablespoon olive oil
1 medium onion, chopped
1 carrot, chopped
2 stalks celery, choppd
2 cloves of garlic, minced
1/2 cup dry white wine
2 cups of roasted tomato sauce (see below for recipe) or 1 (14.5oz) can whole tomatoes in juice, chopped
1/2 tsp dried oregano
1/8 tsp red pepper flakes
2 tablespoon olive oil
1) Mix first 4 ingredients together. Let it sit for at least 10 mins to marinate.
2) Heat saute pan with 2 tablespoon olive oil. Add onion, carrot, celery and garlic. Stir and cook till vegetables are enter.
3) Add chicken. Brown chicken on all sides. Stir occasionally.
4) Add wine and cook for 30 seconds. Then add tomato sauce, oregano and red pepper flakes.
5) Cover pan. Let it simmer and cook for 10 mins, until chicken is done. Add salt and pepper to taste.
