    Pannini French Bacon Egg Toast

  • Ingredients


    1 lb Hormel Bacon

    8 slices of your favorite bread, suitable for french toast

    6-8 Eggs

    2-3 tbsp Vanilla

    1 tbsp Maple extract

    2-3 tbsp Cinnamon *to taste)

    Butter flavor non stick spray

    1 c milk

    1 c fresh strawberries

    1 c fresh blueberries

    1 Yoplait strawberry banana yogurt

    *optional: confectioners sugar





    Directions


    heat pannini maker

    on pannini maker, fry 1 lb bacon
    *caution! this fries quickly and needs to be watched closely!

    while frying bacon: in a bowl, mix 4 eggs with 1/4 c milk. Beat
    Place eggs in a frying pan sprayed with non stick butter spray. Make like an omelet NOT scrambled eggs. When done. cut into 4 sections and set aside.

    using paper towels, remove excess bacon grease from pannini maker - leave heated

    in a bowl mix together WELL; vanilla, maple extract, remaining milk, cinnamon, remaining eggs.

    Spray pannini maker with butter flavor non stick spray

    dip bread in french toast wash and fry, 4 at a time on pannini maker

    when french toast is done and while still hot, top with egg quarter and bacon, top with another piece of french toast, making a french toast sandwich

    If additional sweetness is desired, dust lightly with confectioners sugar on one side..

    Serve with a side of fresh strawberries/blueberries topped with a dollop of yogurt. YUM!

    I am a 55 year old mother of 4 with 7 grand children. I have had no formal training as a Chef but have worked for 30 years with many excellent Chef's and have been a foodie since long before the term was coined! This is my own creation and came about as a convenience food. My family and friends LOVE this! We all ADORE bacon and agree that there is NEVER enough bacon!
    In fact, we have decided that if we ever win the lottery we will have only 1 household staffer - someone whose job is expressly to do nothing but cook bacon for this family!
