  • Ingredients


    2 baking potatoes
    4 T butter or margarine
    6 T sour cream
    3/4 c. shredded cheese
    1 t. diced onions
    1/2 t. finely diced jalapenos
    Salt and pepper to taste





    Directions


    Preheat oven to 400 degrees,

    Scrub potatoes. Rub with oil, sprinkle with kosher salt.

    Microwave on high for 4 minutes. Let cool enough to handle.

    Cut potatoes in half lengthwise, and scoop out into bowl, leaving enough edge on each shell to hold mixture.

    Mash the potato pulp with a fork while still warm,adding remaining ingredients.

    Heap mixture into potato shells.

    Bake for 25 minutes, or until slightly browned and crispy around the edges.
