2 baking potatoes
4 T butter or margarine
6 T sour cream
3/4 c. shredded cheese
1 t. diced onions
1/2 t. finely diced jalapenos
Salt and pepper to taste
Preheat oven to 400 degrees,
Scrub potatoes. Rub with oil, sprinkle with kosher salt.
Microwave on high for 4 minutes. Let cool enough to handle.
Cut potatoes in half lengthwise, and scoop out into bowl, leaving enough edge on each shell to hold mixture.
Mash the potato pulp with a fork while still warm, adding remaining ingredients.
Heap mixture into potato shells.
Bake for 25 minutes, or until slightly browned and crispy around the edges.
Originally baked twice, but adapted to "green way"! Should have said "Twice-Cooked"? LOL!
