4 Boneless Skinless Chicken Breasts
3 Garlic Cloves, minced very fine, reserve ¼ teaspoon
¾ tsp Dried Thyme
Salt & Pepper, to taste
8 slices Thick Cut Bacon
1 Large Onion, sliced ¼-½"
2 Medium Tomatoes, sliced ¼-½"
¼ tsp Dried Basil
¼ tsp Dried Oregano
8 Sprigs Fresh Thyme
Rub each chicken breast with garlic, dried thyme, salt, and pepper, then let marinate for at least 15 minutes. Cook bacon about 1/4 way done in microwave. Top each breast with an onion slice and tomato slice. Season tomato with reserved garlic, then salt, pepper, basil, and oregano. Wrap 2 bacon slices crisscross around the whole breast, tomato and all, tucking ends of bacon under breast. Bake in a 375 degree oven for 20 minutes. Poke thyme stems under tomato and onion for presentation. Return to oven for 10 more minutes, may need to adjust cooking time depending on the thickness of chicken. Chicken should reach 165 degrees F. This is great served with fettuccine Alfredo and a salad.
