For CousCous

1 box of couscous
1 tablespoon olive oil
1 tablespoon chopped sundried tomatoes
1 tablespoon raisins
1 teaspoon orange zest
For Chicken

4 Chicken breasts
1 clove garlic. chopped
1/2 cup fresh orange juice
1 cup apricot jam
1 tablespoon dried oregano
1) Add all ingredients for chicken in a bag and marinate for at least 30 mins. Make sure chicken is coated well with all the seasoning.
2) Preheat oven to 400F
3) Boil water with olive oil and cook couscous (follow directions on box). When water is boiling, add couscous, sundried tomatoes, raisins, orange zest. Cover and remove from heat.
4) Let couscous sit for 5 mins and then fluff with fork.
5) Remove chicken from bag and slit an opening on each breast.
6) Spray non-stick spray on backing tray.
7) Place each breasts on tray.
8) Stuff each breasts with the cooked couscous.
9) Pour or brush remaining marinade on chicken.
10) Bake in oven for 20 mins or till chicken is cooked.
11) When cooked, remove from oven and serve with sauteed green beans or side of your choice.
