2 lb Sweet Potato
8 oz Cream Cheese
2 tablespoon butter
1 cup Chopped Bacon
2 tablespoons Flour
2 Eggs, beaten
1/2 cup Flour
1 cup Panko
Oil for deep-fry
1. Cut sweet potato into small cubes and boil until tender. Drain.
3.Transfer to a bowl. Mash sweet potatoes. Then add cream cheese, butter, bacon, 2 tablespoons flour and pepper. Mix well until smooth.
4.Take about golf ball size of mixture and shape it into ball. Then coat with flour, dip in beaten eggs and then coat with panko.
5. Heat oil in a frying pan and deep fry croquettes until golden.
Croquette is one of Japanese traditional food. My mother makes lots of variety of croquettes. This is my favorite and we used to cook together. Japanese sweet potato is different from American sweet potato so I add flour to the mixture since American sweet potato is more waterly but other than that, this is my mother's original recipe and I learned how to make.
