Ingredients

1 loaf of baguette
2 medium ripe tomatoes, chopped
1 ball of mozzarella cheese, cubed
1 brunch of fresh basil leaves, sliced
3 tablespoon garlic olive oil
Pinch of salt and pepper

Directions

1) Preheat oven to 400F.

2) Slice baguette, about 1 inch thick. Places on cookie sheet.

3) Brush garlic olive oil on each slice of bread. Toast bread in oven till edges are golden brown, about 8-10 minutes.

4) Combine chopped tomatoes, mozzarella, basil leaves and salt and pepper in a bowl. Add 1 tablespoon of garlic olive oil and toss.

5) Remove bread from oven and add tomato mixture to each slice.

6) If desired, drizzle more olive oil on each piece and add some freshly cracked pepper.

I find this recipe to be just great! However, when I did mine as I am not an avid salt user,e, I used a bit of balsamic glaze. I also add finely chopped garlic or red onion & maybe a little bit of chopped bocconcini ball too.
