    Chef's Note & Story

Even though we call this recipe "Christmas Morning Casserole", we like to have it on Easter morning as well. I have many fond memories of waking up to this holiday treat, to going down stairs and hugging my mum, who smelled like her cooking. As the years have gone by my mum has taught both my older sister & myself how to make this time tested breakfast! Sadly we lost our mum to cancer last October & I chose to carry on the tradition of filling our home with the same smell & tastes that will forever remind me of her.
