  • Ingredients


    3 tsp finely grated fresh ginger
    1/2 cup chopped cilantro
    1.5 tsp grated lime zest
    1 tbsp lime juice
    4 skinless chicken breast fillets, chopped into 1-inch cubes
    1 red bell pepper, chopped into 1-inch pieces
    1 red onion, chopped into 1-inch pieces
    10-20 wooden skewers





    Directions


    1) Soak wooden skewers in water for at least 20 mins.

    2) Combine all ingredients in a bowl or bag. Let meat marinate for at least 1 hour.

    3) Preheat oven to 450F (if not using grill).

    4) Skewer vegetables and chicken together. Start with a piece of red pepper, then add 1 piece chicken, followed by 1 piece onion. Repeat again.

    5) Cook chicken skewers on grill or in oven. If cooking in oven, spray a baking sheet with non-stick oil. Line skewers on tray. Bake for about 10 mins. Then turn on the broiler for 5 mins or till golden brown with a little charred marks.

    6) Serve immediately with sides of vegetables and rice or couscous.
