  • Ingredients


    5 lbs Raw or Green peanuts
    Rock Salt
    Water

    Cajun
    Garlic
    onion
    crushed red peppers
    old bay seasoning





    Directions


    Add 1 ROCK SALT cup of salt to water never much measuring when it comes to cooking peanuts I go by tasting as they cook until I get what I am looking for.

    Cook, covered, on high heat for 4 to 7 hours.
    Add water as needed

    Boil the peanuts for approximately 4 hours, stirring occasionally, and then taste.

    Taste again in 10 minutes, both for salt and texture.
    Keep cooking and tasting until the peanuts reach desired texture.
    Cajun again there is no measuring its by taste
    1whole garlic peeled of course
    whole onion YEP! just drop the whole thing in the water
    2 tbs crushed red pepper
    6oz OLD BAY SEASONING THE BEST
    let your peanuts cool overnight in the brew reheat the next day. Woooo They will be CAJUN GOOD. Open a cold one and enjoy!





    Chef's Note & Story

    Being from the South, I grew up eating boiled peanuts. Boiled peanuts have been popular in the south since at least the civil war when our troops used to carry them as a large part of their rations.
    peanut boils have been organizing principles for social gatherings. Barbecue, boiled peanuts are symbols of southern culture and cuisine. And yes I have sold Boiled peanuts in Florida I had what some would call a (Produce Stand) My Grandma Kierce gave me the recipe for the peanuts, I have come up with my own Cajun recipe. Whenever I am back home the first thing i do is to seek out a roadside peanut vendor, I can smell them a mile away.
    I spend most of my time now in supermarkets where you can buy imported every thing,
    But no boiled peanuts!!!!
    So when I am ready for a trip down memory lane or I have family and friends over, we break out the propane and the big black pot and start boiling peanuts. We can't always get the Green Peanuts here(BEST TO BOIL) so we settle for a 25lb bag of raw peanuts. There is always some left so I freeze them.
    The shelf-life of boiled peanuts is short. They generally last just a few days before they begin to go bad.
