  • Ingredients


    1/4 cup Apricot/Habanero jam
    Dekuyper Apricot Brandy

    3 to 4lb pork loin Roast





    Directions


    add Brandy to jam until the mixture is about the consistancy of honey. Set aside.

    Season Pork with kosher salt and fresh ground pepper, then brown on all sides Remove from pan and deglaze the pan with brandy.
    Reserve the liquid to Pour over the roast after you return it to the pan.
    Using a basting brush, coat the roast with the jam/brandy mixture.
    Place covered roaster in lower half of oven at 350 degrees and roast for 35-45 minutes per pound.
    Baste periodicly with jam/brandy mixture through roasting time.
    Remove from oven when thermometer reads 170 degrees and let stand for 10 to 15 minutes before serving.





    Chef's Note & Story

    The idea for this recipe came from a friend who used Apricot jam and brandy to glaze his grilled pork steaks.
    I used my home made Apricot/onion/Habanero jam thinned with apricot brandy

This seems to be a very good variation to my traditional Glazed pork loin recipe.
