I received a deep dish pie plate by Emile Henry for Christmas last year and, although I'm not an expert pie chef, I think it made my crust a little more tender. It seems closer to a glass pie pan but with a property that might give the crust a little more heat to get it flaky. I give it top marks. (plus it looks pretty for potluck contributions -- even for non-desserts like shepard's pie).
