Tomato Basil Frittata
6 large eggs
1 cup cherry tomatoes, cut into halves
3 large tomatoes, thinly sliced
1 scallion, chopped
1/2 cup milk or soy milk
1/3 cup shredded cheese
1 tsp soy sauce (you can use salt but I find soy sauce tastes better)
2 -3 basil leaves, thinly sliced
Recommended Products
1) Preheat oven to 375F.
2) Spray an oven-safe casserole with non-stick spray. Layer sliced large tomatoes on the bottom of the casserole.
3) In a large bowl, add eggs and beat well. Add all remaining ingredients and mix well.
4) Pour egg mixture into casserole. Bake at 375F for 25 - 30 mins, till egg mixture is set.

Nice simple recipe but I only used large tomatoes and soy sauce. Yes you're right, it tastes better than using salt. I've tried using salt too.
Tomato-basil is such a classic combination, but I have tried it only with sun-dried tomato. Certainly, I'll try this one soon....
