Gnocchi With Prosciutto And Herb Infused Olive Oil

Store-bought or homemade gnocchi
(enough for 2, see below for homemade gnocchi recipe)
4 slices of Prosciutto
1 sprig of rosemary, chopped
1 basil leave, whole
1 clove garlic, whole but crushed
1 tablespoon olive oil + 3 tablespoon olive oil
Recommended Products
1) Heat a skillet. When heated, add 1 tablespoon olive oil. Then add prosciutto to skillet. Cook till very crispy on both sides. When done, remove and let it cool on a plate and let it sit on top of a paper towel to absorb some of the grease.
2) Lower heat to low. Add remaining olive oil to skillet. Add rosemary, basil leave and garlic. Let the herb infuse with the prosciutto drippings and olive oil. Keep it low for about 20 mins.
3) In a large pot, add water and a pinch of salt. Bring to a boil and add gnocchi to cook. When gnocchi floats to surface, it's done cooking. Drain to remove water. Add gnocchi in a large bowl. Add the herb infused olive oil and toss well. You may not need to add all the oil.
4) Put gnocchi on serving plates. On top of each serving plate, use your hands to crumble the crispy prosciutto. Serve immediately.
