9 Tablespoons Unsalted Butter
1 Cup Packed Light Brown Sugar
4 Red Plums
1 Egg
½ Cup Reduced Fat Sour Cream
1 Cup Flour
½ Teaspoon Baking Soda
¼ Teaspoon Salt
1 ½ Teaspoons Pumpkin Pie Spice
1/3 Cup Chopped Walnuts
Whipped Cream
1.Pit and cut plums into 12 wedges
2.Preheat oven to 325
3.Place 3 tablespoons butter in 8 in round pan and melt in preheating oven
4.Sprinkle melted butter with ½ cup brown sugar
5.Arrange overlapping plum wedges in a circle around edge of pan, repeat in center
6.In bowl, beat together 6 tablespoons butter, ½ cup brown sugar, and egg
7.Beat in sour cream until blended
8.In different bowl, mix together flour, baking soda, salt, pumpkin pie spice, and walnuts
9.Stir flour mix into sour cream mix until just combined
10.Spread batter over plums
11.Bake until toothpick comes out clean (50 min)
12.Cool in pan for 5 min
13.Cut along the edge of the pan and then invert onto a serving plate
14.Serve at room temp with whipped cream
Make sure you arrange the plums neatly in the beginning.
