CREAM FILLING~
1 cup solid vegetable shortening*
1 1/2 cups powdered (confectioner's) sugar
2 cups Marshmallow Fluff**
1 1/2 teaspoons pure vanilla extract
Mix together all ingredients. Get ready to add to the moon pies when cakes are cool.
Preheat oven to 350 degrees F.
Lightly grease baking sheets or use parchment paper.
In a large bowl, cream together shortening, sugar, and egg.
In another bowl, combine cocoa, flour, baking powder, baking soda, and salt.
stir the vanilla extract into the milk.
Add the dry ingredients to the shortening mixture, alternating with the milk mixture; beating until smooth.
Drop batter with a tablespoon ( to make 24 mini moon pies ) onto prepared baking sheets. With the back of a spoon spread batter into 2-inch circles, leaving approximately 2 inches between each cake. If larger moon pies add more batter and spread.
Bake 15 minutes or until they are firm to the touch and soft top.
Remove from oven and let cool completely on a wire rack.
Make the moon Pie Filling. When the cakes are completely cool, spread the flat side (bottom) of one chocolate cake with a generous amount of fluffy filling.. You can store the chocolate cakes. Refrigerate the filling in a closed container.
When ready to eat just make a fresh moon pie.
Wrap moon pies individually in wax paper, or place them in a single layer on a platter (do not stack them, as they tend to stick). If stacking place wax paper between each layer of moon pies.

Chef's Note & Story
You can dip half of the moon pie in a hot chocolate sauce and let it cool for an extra special detail. Serve with a side of fresh strawberries.
